This is enough for 2 servings:

  • 4 large or 6 small whole beetroot
  • 2 tbsp apple cider vinegar
  • Sea salt
  • 300-400ml chicken or vegetable stock
  • Dill
  • Sour cream

First, you need to preheat the oven on 200 C. After that wash the beetroot well and cut it all away but an inch of stalk. Then put it on a tray for roasting and include water inside until it is half full and add the vinegar as well. At the end, bake it 40-45 min, and check until it gets soft.

Leave it to cool down a little and then by using a kitchen paper rub the skin from it. Then chop the beetroot and then blend it together with the heated stock and chopped dill. You can consume it warm or cold with sour cream.
