  • Vietnamese inspired noodle salad


  • 100g raw prawns
  • 50g glass noodles
  • 50g sugar snap peas
  • 1 carrot, cut into matchsticks
  • 1⁄2 courgette, cut into matchsticks
  • 2 spring onions, sliced
  • a small handful of bean sprouts
  • small bunch of coriander, chopped
  • 2 tbsp sesame seeds, toasted

For the dressing:

  • 1 garlic clove, finely chopped
  • 5cm ginger, finely chopped
  • 1 red chili, finely sliced
  • 1 tbsp fish sauce
  • zest and juice of 1 lime
  • 1 tbsp brown sugar
  • 1 tbsp groundnut oil
  • 1⁄2 tsp sesame oil


Put all the ingredients for the dressing in a small jar, close it and shake it. Put 1 tbsp of the dressing on the prawns so they can start marinating.

Next, put the noodles in a heatproof bowl and pour boiling water over them. Leave them in the water until you prepare the vegetables, and then drain them. Add the rest of the ingredients, except the sesame seeds and the prawns, in a 700ml jar, close it and shake it well.

In the end, fry the prawns in a pan until they become pink and then just add them to the rest of the ingredients in the jar. Add the rest of the dressing and sprinkle sesame seeds. Store it in the fridge. It will last for 2 days.

  • 5-6 baby potatoes halved
  • 2 eggs
  • 1 hot smoked salmon fillet, broken into large flakes

  • 1 tbsp capers, chopped
  • a few sprigs of dill
  • zest and juice of 1⁄2 lemon
  • 1 tbsp olive oil
  • 1⁄2 tsp each salt and pepper
  • 1⁄2 tsp Dijon mustard


Cook the potatoes in a pan with boiling water for 10-12 min. They are ready when a knife goes in them cleanly without resistance.

Next, boil the eggs for 6 min. and run them through cold water in order to peel them more easily.

  • 1 tsp salt
  • 1 tsp brown sugar
  • 2 tbsp rice vinegar
  • 1 carrot
  • 1⁄4 cucumber
  • 1⁄2 avocado
  • juice of 1⁄2 lime
  • 1 nori sheet
  • soy sauce, to taste
  • wasabi, to taste
  • pickled ginger, to taste
  • black sesame seeds, for sprinkling


First, rinse the rice and put it in a pan with 200ml of water, on low heat. When it starts boiling, cover it and leave it for 6-8 min. until the water is absorbed.

Mix the sugar, the salt, and the vinegar until they are dissolved. Scoop the rice with a wooden spoon in a bowl and add the vinegar seasoning. When it is cooled enough, store it in the fridge.

Next, chop the cucumber and the carrots into matchsticks, the avocado into dices and the nori into bite-sized squares, and add them to the lime juice.

In the end, take a 700ml jar and layer the nori and rice first, then add a drizzle of soy sauce, a dab of wasabi and some pickled ginger. Then, add a few pieces of each vegetable and sprinkle sesame seeds. Repeat the procedure until you use all of the ingredients. Store it in the fridge. It will last for 3 days.
